These little Oreo Cookie Truffles are easy to make and delicious. The chocolate and coconut are a great flavor combination. Coated in blue candy and topped with shredded coconut makes them perfect for the upcoming holidays. They would also be a great treat for a “Frozen” themed birthday or party.
Coconut Oreo Cookie Truffles
Ingredients:
- 1 package Oreo Cookies or other chocolate sandwich cookie
- 1 package cream cheese
- 1 package of candy melts – I used blue
- 1 package of shredded coconut
Instructions:
Crush the sandwich cookies into a fine crumb. It will be sticky because of the icing from the middle of the cookie.
Add cream cheese to the cookie crumbs. Begin with 4oz and continue adding until the consistency of the mixture will hold together to form balls.
Gather approximately 1 tbsp of the mixture in your hands and roll into a packed ball. Place the cookie balls onto a piece of parchment paper and place in the freezer to chill for 10 minutes.
Place the candy melt in a microwave safe bowl and heat in the microwave for 25 seconds. Stir the candy and return to the microwave for an additional 25 seconds. Stir and repeat until the candy is completely melted and smooth.
Remove the cookie balls from the freezer and dip them into the melted candy, making sure to completely cover them. While the candy is still melted sprinkle a small amount of shredded coconut over each.
Let the candy melt harden and these cookie truffles are ready to serve! They will stay moist inside for quite some time so are a great make ahead treat.
