I just love cooking hearty meals this time of year. One of my family favorites is lasagna. My secret? The super flavorful, meaty tomato sauce. This recipe has never failed me and makes the perfect amount for lasagna. Enjoy !
Ingredients:
1 T olive oil
1 medium onion
6 garlic cloves
1 pound breakfast sausage (jimmy dean)
1/4 cup heavy cream
28 oz tomato purée
28 oz diced tomatoes
Salt pepper
Directions:
Heat olive oil in a large pot, add chopped onion. Cook 3 minutes until translucent but not browned. Add minced garlic and cook additional 3 minutes. Add sausage and break meat up into chunks. Cook mixture an additional 5 minutes until meat loses raw color. Add heavy cream and cook 3 minutes. Adds tomato puree and diced tomatoes, cooking an additional 3 minutes. Season with salt and pepper to taste.
*Note- once cooled, this sauce can be layered with no boil lasagna noodles, shredded mozzarella cheese and a ricotta cheese/Parmesan cheese/egg mixture to make a delicious lasagna. Bake 350 for 30 minutes.
This sauce is also delicious on plain pasta!

Looks like a quick and easy sauce to make. However, whenever I make a lasagna or spaghetti sauce, I start early in the morning as all of mine are made from scratch right down to fresh tomatoes that are stewed and later placed in the food processor to break them down. I do use 2 small cans of tomato paste to help thicken the sauce some. I use italian sausage links (browned and sliced) as well as 2 lbs of pork sausage in the sauce. Once I have all the ingredients (much more than just tomatoes/paste and meat) together in one pan, I let them simmer gently for most of the day so the flavors have a chance to blend together. I have never had anything but compliments on my sauces.

I made something with cream and sauce recently and it was great, never thought of using breakfast sausage, how different for me. I guess i can try it or they sometimes they sell sausage meat without the casing, sort of like chopmeat….it does sound delicious however.
If I’m not cooking real sauce I hate jarred. i can tolerate jarred if its on ravioli because the cheese in the ravioli covers up the bad taste. this would be a quick alternative to jarred when i don’t have time to make a large pot of sauce
