Jenni and her oldest were kind enough to come up with this fun- and delicious- Luau Pina Colada Cake Recipe– for us. You remember how easy the Boston Cream Pie Recipe was that my daughter and I made earlier in the week, right? Well, this is just as easy. Jenni’s son is a big foodie so he had lots of fun making this special cake for their nanny’s birthday. You’ll probably see 2 of her other 3 boys in a pic or 2. They all love to help in the kitchen!
Luau Pina Colada Cake Recipe
Ingredients:
1 angel food cake
4 angel food cake cupcakes
1 can cream of coconut
4 oz pineapple juice
1 can frozen pina colada mix
1 box JELL-O Coconut Cream Flavor Instant Pudding
8 oz Cool Whip thawed
7 oz BAKER’s Angel Flake Shredded coconut
Directions:
Arrange your luau cake by placing cake in the center of your serving dish.
Cut the cupcakes in half and arrange around the cake like petals.
Use a skewer to poke holes throughout your cake.
Combine 1/2 can coconut cream, 4 oz pineapple juice and 1/2 can thawed pina colada mix.
Pour mixture slowly over cake and let sit for 20 minutes.
Cover the entire cake with Cool Whip, then press shredded coconut to the sides.
Chill for 1 hour.
