I love sweet potatoes but have had a hard time getting my family to eat them until I created this Apple Cider Roasted Sweet Potato Recipe. They think it’s like getting dessert for dinner. What they don’t realize is that this recipe is really pretty healthy. They are easy to make and a great side dish for any fall meal.
Apple Cider Roasted Sweet Potato Recipe
Ingredients:
- 2-3 large sweet potatoes
- cinnamon
- nutmeg
- 12 – 15 oz apple cider
- 1 tbsp vegan butter
Instructions:
Preheat the oven to 400 degrees.
Wash the sweet potatoes well. The skin will be left on but not eaten.
Slice the potatoes into medallions approximately 1/2″ thick. If they are too thick, they will take a very long time to cook.
Lay the sweet potato slices in a single layer on a non-stick baking sheet.
Pour the apple cider over the potatoes. They should be 3/4 covered with cider.
Add a dab of vegan butter to the top of each potato.
Sprinkle the potatoes with cinnamon and nutmeg to taste.
Roast in preheated oven for 20 minutes.
Turn the potatoes, add butter to the side that is now up, and sprinkle with cinnamon and nutmeg. Return to oven.
Bake potatoes for an additional 20 minutes or until they are soft.
Serve the roasted sweet potatoes with the skin on. The skin will easily peel away with a fork.

This looks really good. We love sweet potatoes and in the winter they are cheap and pplentiful plus have a great amount of vitamin C. I like how these are just baked and are so simple. This would be a great side dish with pork.
