I love using my crock pot. Slow cooker. Whatever you want to call it…. it makes things a lot simpler for me, especially with busy schedules like ours. This slow cooker chicken breast recipe is easy and so delicious! Plus, this kind of chicken lends itself well to leftover dishes… which means cooking once and eating twice. My favorite kind of cooking!
{easy} Slow Cooker Chicken
Ingredients
2-3 large bone-in or boneless chicken breasts, either work fine
2 tbs olive oil
seasoning of your choice (I used blackening, we like to keep it simple)
salt & pepper to taste
2 tsp. dried parsley
2 C. water
*2 chicken bouillon cubes
**You could also substitute 2 cups of chicken stock.
Directions –
#1. Turn the slow cooker on low and place the chicken breasts in the bottom. Drizzle the 2 tbs. of olive oil over the breasts (I like to rub it in using my fingers) and then season the chicken to your liking.
#2. Add the water and bouillon cubes (or chicken broth).
#3. Cover and cook on low 5-6 hours or until cooked through. My crockpot took about 5 hours and I had to turn it on low. The chicken was super juicy and very flavorful.
#4. Serve with a side of your choice.
*Makes approximately 4-5 servings
