A few years ago a friend heard me mention heading to Trader Joe’s. If they have Cookie Butter, get me 2. Maybe 3, she said.
I was all “What is cookie butter??”
and then she told me. I knew that I would need to try this cookie butter, and I knew I’d probably 1. love it and 2. be really thankful the closest TJ’s is a good solid 35 -40 minutes from home.
I was right, on both counts. But it’s almost holiday time, and it’s always nice to make gifts to give, and I’ve always wanted to do some kind of Copycat Trader Joe’s Cookie Butter and figured hey! Now’s the time. So… if you are like me and don’t live near a TJ’s, or really just like to make things at home… get ready. And then get excited. I give you….
Vanilla Cookie Butter
Ingredients
2 C. Nilla Wafer cookie crumbs
½ stick butter, melted
½ C. sweetened condensed milk
¼ C. evaporated milk
1 tsp. vanilla extract
water as needed
Directions
#1. To get the Nilla wafers to crumb form, I used my food processor. I added the entire package of Nilla Wafers and turned it on pulverizing them.
#2. For this step you can either continue to use the food processor or simply mix by hand; add in the melted butter, sweetened condensed milk, the evaporated milk and vanilla. Mix well and add a little bit of water as needed.
#3. Keep in the fridge when not using and feel free to ad a little bit of water to the cookie butter as needed when you use it.
#4. If giving as a gift simply print the gift tag and write the directions on the back for using. (Clicking the image will bring you to a PDF file you can download as well)
Keep in the fridge for up to 2 weeks.

there is a 1/4 cup of evaporated milk in the recipe however you don’t add it in the directions. ?????
