Easy Homemade Gingerbread Cookies are must for your Christmas baking. If you love Gingerbread in general but are not a big fan of molasses this recipe is for you- my no molasses gingerbread recipe is a hit at my house where we love the spiced flavor but not so much the overpowering molasses. You can use a homemade icing or pickup up a cookie icing already in a tube (with 2 little little ones in the house and a busy work load I took a short cut with the pre-made cookie icing).
Easy Homemade Gingerbread Men
Ingredients:
1 1/2 cups dark corn syrup
1 cup dark brown sugar
6 Tbsp. butter,softened
6 cups all-purpose flour
2 tsp. baking
2/3 cup water
2 tsp. ginger
1 tsp. cinnamon
1 tsp.allspice
1 tsp.cloves
1/2 tsp. salt
Directions:
Combine flour, cinnamon, allspice, cloves, ginger, and salt in a bowl, set aside.
In the bowl of a hand or stand mixer cream butter and sugar until smooth.
Add in molasses and water and mix until just combined.
Add flour mixture half at a time until incorporated.
Cover bowl and place dough in refrigerator to chill- at least 2 hours but overnight is best.
Preheat oven to 350
Flour counter liberally, roll dough out to 1/4″ to 1/2″ thickness.
Cut out gingerbread shapes with floured cutters.
Place on baking sheet lined with parchment paper or a silpat mat.
Bake for 8-10 minutes.
Remove from oven and allow cookies to cool on pan for 3 to 4 minutes before transferring to a cooling rack.
When cookie are completely cooled you can decorate by icing with a piping bag, add small candies before icing sets of desired.
