The dressing pulls together with just 4 ingredients. Why grapefruit? Well, I feel like grapefruit is like the forgotten citrus. It doesn’t always get a fair shake when speaking of citrus. Since it’s February, and National Grapefruit Month, we’re celebrating with new DOLE Red Grapefruit Sunrise Fruit Bowls. One of these delicious snack packs make the perfect size for a small batch of vinaigrette, then toss the grapefruit quarters in your salad mix to add another layer of flavor and texture. The feta gives a tang that pairs nicely with the tartness of the grapefruit.

Grapefruit Vinaigrette Salad
Ingredients
2 cups fresh Spinach
1 TBSP Feta cheese
Fruit + Juice (separate) from 1 Dole Red Grapefruit Sunrise cup (about 1/4 cup- and it’s 100% juice!)
1 Tbsp. apple cider vinegar
2 tsp. honey (We always go for local, good for allergies)
pepper to taste
Directions:
Toss spinach, feta and grapefruit chunks in bowl. Whisk together juice, honey, cider vinegar and pepper well, store unused dressing in an airtight container in the refrigerator for up to a week.
If you want a lighter dressing to replace the heavier cream versions this one will perk up your salad greens for sure!

So I am one of those rare people who does not like fruit in my salad. I do however love grapefruit fruit cups. I actually just got some of the dole cups on my last supermarket run

I love grapefruits but I have never been able to eat them with anything. So, I just cut one in half an enjoy it with a spoon.
