I am always looking for easy, delicious, and healthy ways to provide the kids with snacks they love. Granola is great because it is super simple to throw together with whatever you have on hand and when stored properly will keep for awhile. It is also a very versatile snack-we eat ours straight from the container or add it to yogurt, oatmeal, and ice cream, and more. Always experimenting with flavors I wanted to try something different, yet familiar and loved by the kids- well what is more loved than peanut butter and jelly by almost ever kid you know? I myself love how this turned out so much it is now one of my new favorite snacks, adding a little touch of childhood nostalgia to my grown up life. This is also a great recipe to include the kids in preperation and goes along with our Kids in The Kitchen Series.
Peanut Butter & Jelly Granola Recipe
Ingredients:
2 cups oats
1/3 cup honey
1/3 cup creamy peanut butter
3/4 cup peanuts
1/4- 1/3 cup jelly or preserves
Directions:
Preheat oven to 350 degrees
Cover a baking sheet with parchment paper or a silpat mat.
Combine peanut butter and honey in a microwave safe dish- heat in 30 second increments, stirring each time, until thoroughly melted.
In a large bowl place oats and peanuts, stir in peanut butter mixture until well coated.
This is a great time to bring in a little helper if you haven’t already.
Spread oat mixture over prepared pan. Add small dollops of jelly over granola.
Bake for 10 minutes, stir well.
Bake an additional 5 minutes.
Allow to cool completely then transfer to an airtight container.

This looks amazing! I’m going to pin this so that I can try it later. I make peanut butter and jelly oat bars with similar ingredients for a quick breakfast in the morning. Never thought of making PB&J granola!
