Summer is HERE!! One of my favorite things about summer is the fruits and veggies we can get fresh- even from our yard. There’s just something I love so much about going outside (or even down the road) to pick fresh fruits and veggies that are grown right here, that I don’t have to head to a store to buy. We’re lucky to have many, many raspberry bushes in our yard that were planted by the previous homeowners, plus we’ve added a few of our own, so right now, we’re heading into one of the kids’ favorite times of year when the berries are ripe and plump! More get eaten than end up in a bowl when we pick but who cares? It’s berries, and they are good for us, sweet, and one of the telltale signs that summer vacation has finally arrived after a long winter.
So what do we Martins do when we have too many raspberries? We bake with them, of course!! Sometimes we use them on our Cookies with Nutella Frosting and Raspberries, but other times, we just go straight to baked yum and make a simple raspberry crisp recipe. It’s super easy to make, makes the house smell amazing, and tastes out of this world yummy. Plus, it’s a lot healthier than many dessert options and we generally have all the ingredients on hand so no trips to the store. Low maintenance baking, that’s what I like! Plus, fruity desserts are perfect to bring along for parties, BBQ and picnics in the warmer months.
