Having chickens means we have a LOT of eggs in the house almost always. Eggs, eggs and more eggs. Pair that with 3 kids who really love to help in the kitchen and want to be part of the action and, well, we’ve had our share of egg messes. So many egg messes. I hate the egg messes, I despise trying to capture the elusive shells that inevitably get into our recipes, but I also love teaching my kids their way around a kitchen, and I love cooking with them. When the folks from Crack’em asked if I’d give their dual purpose product a try, one that promised to make less mess of the whole egg cracking experience, I was quick to say yes.
Easy Ham & Egg Cups
Eggs (1 per person, however many you are making, we did 6 for this recipe)
Ham (1 slice per muffin tin)
Muffin Tin
cooking spray
Directions
Wash hands.
Spritz your muffin pans with some cooking spray
Grab your Crack’em and an egg, and get crackin’ (See what I did there?)
Tuck one piece ham into each muffin tin
Add your egg right from the Crack’em on top of the ham.
Bake 20-25 minutes at 350.
Pop the ham & egg cups out of the tins, serve with a side of fruit, and voila! A protein rich, gluten free breakfast to start your day!
You could, of course, also add some cheese, chopped up veggies, etc. to these, but the kids were pretty clear they wanted SIMPLE egg and ham cups. No more, no less. So they made them. Then they ate them!
So what’s so great about this Crack’em thing? Can’t we all just crack eggs the way our gramas did? Well, honestly, we could. I mean, I’ve lived 41 years without a Crack’em, and I’m living a pretty full life. But I LOVE the Crack’em. It’s handy. It’s helpful. It contains the egg mess when my 5 year old overpowers the egg when cracking it and keeps the shell bits in one contained place. Once you’ve fished the shell bits out, the Crack’em tilts to let the egg slide right into your mixer, bowl, or what have you. Easy, peasy. Use it, pop it in the dishwasher, done.
It makes it less stressful when the kids want to help with the cracking of the eggs.
