Apple Cinnamon Gluten Free Cereal Bars
Ingredients
3 cups Gluten Free Apple Cinnamon Cheerios
1/2 cup Peanut butter
1/2 cup Honey
1 tsp. cinnamon
1 cup dried apple slices (before crushing)
Directions:
Coat an 8×8 pan well with butter.
Chop apple slices into small bite sized pieces.
Place cereal, cinnamon, and apple pieces in a large bowl
Combine peanut butter and honey in a microwave safe dish and heat in 30 second intervals stirring each time until melted.
Pour peanut butter mixture over cereal and stir to coat completely.
Scoop into prepared 8×8 pan and press firmly into pan.
Allow to set by chilling in refrigerator for one hour, then cut into 2″ x 2” pieces.

These look so super easy and amazingly good! I am gluten free also and I know how tricky and hard it can be sometimes. Keep at it, it definitely gets easier once you figure out what you can and can’t eat. Having a list of super simple recipes on hand helps too!
