We are officially at back-to-school week! Soccer started last night, practice again Tues/Thurs, school starts Weds, soccer game Saturday, gymnastics starts Monday. My husband is coaching soccer and life is promising to be busier than ever this fall. Busy Back to school days could use some shortcuts on time without sacrificing flavor in your meals. They can even be fun, international dishes with minimal fuss and minimal dishes that can be a hearty lunch for school or work or even a super quick prep dinner for the family. Thai Peanut Chicken Skewers
Ingredients:
Minute® Ready to Serve Rice- Whole Grain White
1- 1 1/2 lbs. boneless, skinless chicken breast
1/3 cup peanut butter
2 Tbsps. sesame oil
2 Tbsp. brown sugar
1/3 cup soy sauce
skewers
optional- sesame seeds
Directions:
Cut chicken into small bite sized pieces, thread onto skewers.
Heat sesame oil in large pain over medium high heat, when ready add chicken skewers and brown on both sides.
When chicken is nearly cooked throughout reduce heat to medium then add peanut butter, soy sauce, and brown sugar- stir well in pan to combine and coat chicken skewers.
Heat through for 5 minutes.

rThe one thing I would change is to use low sodium soy sauce. It was quite salty. It was very tasty!!
