I feel like fall needs to hurry on up and get here. There are apples to be picked, and pumpkin delights to be baked. This series of heat waves we are having in September is not in my plans for fall baking! I want all the fall foods! Bring on the apples and bring on the pumpkins! You know we love baking with pumpkin- Pumpkin Bread, Pumpkin S’mores Bars, Pumpkin Butter and Pancakes, Chocolate Pumpkin Cookies… and today, well, we have some pumpkin whoopie pies with maple filling. Fall fabulousness.
Pumpkin Whoopie Pies
Whoopie Pies
Ingredients:
2 C packed dark brown sugar
1 C coconut oil
1 1/2 C pumpkin puree
2 eggs, room temp
3 C flour
1 tsp salt
1 tsp baking powder
1 tsp baking soda
1 tsp vanilla
1 1/2 tsp ground cinnamon
1 TBSP pumpkin pie spice
Pie Directions:
-Preheat oven to 350 degrees. Line the cookie sheets with parchment paper.
-Combine the oil and brown sugar. Mix in the pumpkin and eggs, beating well.
-Add the flour, salt, baking powder, baking soda, 1 teaspoon vanilla, cinnamon,and pumpkin pie spice. Mix well.
-Drop dough by heaping teaspoons onto the lined cookie sheets.
-Bake at 350 degrees for 10 to 12 minutes.
-Let cookies cool .
Maple Filling
Filling Ingredients:
4 oz. cream cheese, room temp
5 TBSP unsalted butter, room temp
1 TBSP maple syrup
1/8 tsp cinnamon
1 tsp pumpkin pie spice
3 C confectioners’ sugar
Filling Directions:
– In a medium bowl using an electric mixer on medium speed beat the cream cheese and butter until fluffy.
– Add maple syrup, cinnamon, and pumpkin pie spice mixing on low just long enough to blend all ingredients together.
-Slowly add the powdered sugar mixing for a minute. If the filling is not able to hold its shape add 1 TBSP of powdered sugar, mixing as you add it.
Putting together the whoopie pies:
-Line up matching pieces of the pumpkin whoopie pie. Flip over one piece of the whoopie pie so the flat side is up. Spoon on the filling on this side. Put the top half of the whoopie pie on top of the filling.

Why coconut oil? Have you ever made these with any other type of oil? Just curious as I don’t have coconut oil and would rather not buy it just to use it for this recipe which looks delicious. I have never met a whoopie pie that I didn’t like!
