I’m freshening up some old recipe posts- today we’re taking a look at a longtime family favorite, our overnight Vanilla Maple French Toast Casserole. You don’t HAVE to do this as an overnight, but I promise you it’s worth taking the time to do it. The bread just soaks up the egg and milk mixture and the result is amazing. We love this on Christmas morning but sometimes make it on other holiday mornings for a special brunch dish. This breakfast casserole does pair nicely with our Christmas morning coffee drink.an you tell I like to do as little as possible Christmas morning except sit back and enjoy my family? Maple Vanilla French Toast Casserole
Ingredients
1 loaf French bread, torn into 1 inch cubes
1 c brown sugar
1/2 c unsalted butter, room temperature
6 eggs
2 TBSP Maple Sugar (you can also use maple syrup)
2 cups milk (we use vanilla almond or oat milk for baking)
2 TBSP vanilla extract
1 tsp cinnamon
Directions
Melt butter over medium heat in a saucepan, or directly in a glass bottom 9x 13 baking dish if your stovetop allows
As butter melts, gradually whisk in brown sugar until the sugar begins to dissolve.
Once sugar and butter are incorporated, remove saucepan or baking dish from heat. Layer bread chunks evenly atop the mixture.
In a medium mixing bowl, whisk the eggs, milk, maple sugar, vanilla and cinnamon together.
Pour liquid mixture evenly over the bread cubes. Cover and refrigerate overnight.
Next morning: preheat oven to 350 while casserole comes to room temperature.
Uncover casserole. Bake 30-35 minutes until golden brown. Serve with MilkWise.
