Mustard Rosemary Pork Chops

Date night doesn’t roll around often for hubby and I but when it does I want to make it special. This particular date night was at home so I went for one of our go-tos with a flavorful new twist and as always capped it off with a pitcher of our favorite beverage- Lipton iced tea, sweetened just right. We start enjoying our Sweet Tea at lunch and right on through dinner time so it was a natural choice to pair with these Rosemary Mustard Pork Chops. Mustard Rosemary Pork Chops
Ingredients:
- 4-6 pork chops
- ¼ cup yellow mustard
- 1 cup Italian breadcrumbs
- ¼ cup grated parmesan cheese
- 2 T. dried Rosemary
- 1 tsp. Black pepper
- Coarse sea salt to taste
Directions:
Sprinkle pork chops generously with sea salt on both sides.
Use a basting brush to coat each side with mustard. You can use your favorite yellow mustard but I find a spicy English mustard gives these pork chops the best flavor.
In a separate dish, combine Italian bread crumbs, grated Parmesan cheese, pepper, and rosemary to combine well.
Dip mustard coated pork chops in breadcrumb mixture to coat completely.
Heat several tablespoons of oil in a large pan over medium heat.
Cook pork chops for 3-4 minutes on each side, until golden brown and cooked through. I usually cut a small piece out of my thickest chop to test for doneness.
You will find the mustard and rosemary give so much flavor to these pork chops that they will become a favorite paired with a tall cold glass of Lipton iced tea!
To brew a 2-quart pitcher of Lipton iced tea:
Pour 4 cups boiling water over 2 Lipton Cold Brew tea bags in heatproof pitcher.
Brew 3 to 5 minutes; remove tea bags.
Sweeten to taste.
Stir in 6 cups ice cubes until melted. Keep refrigerated.
