Having trouble mixing things up for school and work lunches? I am. The kids and I are so tired of making and eating the same lunch things after 6 months of school. We are all wanting new flavors, and variety. The same old stuff can be made new with some simple flavor swaps or additions! Like simple quesadillas? I always just throw some shredded cheese in between two tortillas. So simple. But why not add different kinds of cheese? Mix it up a bit! Two Cheese Quesadillas
Ingredients
flour tortillas
1 oz garlic and chive Boursin
1 C. shredded cheddar cheese
1/4 C. green onions, diced
sour cream and salsa for serving
Directions
Heat a large pan or a griddle on medium heat.
Place the tortillas on the griddle and let them heat through.
Spread the Boursin cheese on the tortilla (see photo).
Add a few green onions and then shredded cheese (see photos).
Allow the cheese to begin melting and then carefully fold the tortilla in half.
Let brown a few more minutes and then flip.
Remove the quesadilla from the griddle once the cheese has melted and it is heated through.
Serve with salsa and sour cream.
