Spring’s on it’s way, which seems a little silly since many states are buried under feet of snow and we have a pretty good storm winding up for later this week, but it’s still coming, at least on the calendar. With spring’s arrival comes more daylight hours (yay!) and all of us wanting to be outside for longer periods of time…which often means that I’m rushing to get dinner cooked. Recipes like this pepperoni pizza pasta casserole are a saver- I can either whip it up while I’m eating lunch (working at home has perks) or we can throw it together before heading out for a walk or to play outside when school’s out.
Plus- we still have normal activities and spring sports are starting soon. Gymnastics meets wind up with the state championships at the end of April and between now and then are dozens and dozens of activities at church, Scouts, soccer, gymnastics and work. Plus Easter!
Pizza Pasta Casserole

Pepperoni Pizza Pasta Casserole
Ingredients
1 (16 ounce) package medium egg noodles
1 (24 ounce) jar marinara sauce
1 1/2 cups shredded mozzarella cheese
½ (6 ounce) package sliced pepperoni
Instructions
Preheat oven to 350 degrees.
Cook egg noodles according to package directions. Drain well.
Return noodles to pot and toss with pasta sauce.
In a 9×13 baking dish (or the equivalent in a different shape), begin creating layers using half the pasta noodles as the base.
Then use half the mozzarella to create a layer of cheese, followed by a layer of pepperoni. Repeat using noodles, cheese, and pepperoni.
Place in the oven loosely covered (by tenting aluminum foil) for 20 minutes.
Remove aluminum foil and cook for another 5 to 10 minutes or until the casserole is cooked through and the pepperoni is crispy.
