Oreo Monster Cookie Bars
We are on spring break this week. We didn’t have a planned trip, but we did plan some fun day trips and outings, planning to make the most of some downtime to do fun things. But- as things go, our plans were foiled. My little one’s down for the count with strep throat and mono (of all things!!) and simply doesn’t have energy nor stamina to go on outings or do road trips. So our plans will be delayed until she’s feeling better, and instead, we’ve been doing lots of cuddling on the couch (we watched the entirety of the Lemony Snicket: A Series of Unfortunate Events and enjoyed it a lot), napping, doing crafts (diamond art kits are a new favorite) and baking! I’ve always been intrigued by monster cookies, because, well, COOKIES. These Oreo Monster Cookie Bars are kind of a mix of a brownie and a cookie and a cookie bar and SO MUCH CHOCOLATE!

Oreo Monster Cookie Bars
Ingredients:
1 C unsalted sweet cream butter, melted
1 1/4 C sugar
1/2 C light brown sugar
2 eggs + 1 egg yolk
2 tsp vanilla extract
2 1/2 C all-purpose flour
2 tsp cornstarch
1 /2 tsp baking powder
1 tsp salt
1 C mini semisweet chocolate chips
2 C chopped (16) oreos
2 C chopped (16) golden oreos
1 C Mini M&M’s
Directions:
Preheat oven to 350 degrees.
Line a 9×9 baking dish with parchment paper.
In a standing mixer, combine the melted butter, sugar and light brown sugar and mix until combined
Add the two eggs, and one egg yolk one at a time. Mixing well after each egg.
Stir in vanilla extract.
Mix together using a whisk, the flour, cornstarch, baking powder, and salt in a second bowl.
Gradually add dry ingredients into wet ingredients.
Mix until combined
Mix in the chocolate chips, 1/2 C mini M&M’s, 1 C oreo, and 1 C golden oreo
Pour the cookie batter into the pan and use a rubber spatula to evenly spread the batter
Sprinkle the remaining mini M&M, 1 C oreo and 1 C golden oreo onto the top of the cookie bar batter
Bake in your preheated oven for 35-40 minutes or until edges just begin to turn golden brown and a toothpick inserted in the center comes out clean.
Remove from oven slightly cooling before cutting and serving.
