I love almost everything fall and especially love these Acorn Cookie Pops I made last week! They are really pretty adorable and I can’t wait to make them again for our fall party we have coming up in a couple of weeks. They’re made a lot like a cake pop but have a little different taste and texture. They’ll be a hit whether you take them for a school snack or individually wrap them to give away.
Acorn Cookie Pops
Ingredients:
- 1 package vanilla sandwich cookies
- 1 cup buttercream frosting
- 1 package chocolate candy melt
- 1 package pumpkin spice candy melt
- 1 package cinnamon graham crackers
- 1 package small pretzel sticks
- 1 package lollipop sticks
Instructions:
In a medium bowl, crush the vanilla sandwich cookies into fine crumbs. They will start to stick together because of the icing inside the cookies.
Add the buttercream frosting in small amounts until the mixture is very sticky and will hold together when formed into shapes.
Take a small amount of the crushed cookie in your hands and press together to make an acorn shape. Make sure to press the mixture together firmly.
Insert a paper lollipop stick into each cookie ball and freeze for 5-10 minutes.
Melt the pumpkin spice candy melt in the microwave according to package instructions.
Remove the cookie pops from the freezer and carefully cover the entire acorn with the pumpkin spice candy melt. Stand upright in a jar or glass to let candy melt harden.
Once the pumpkin spice candy melt is hard, melt the chocolate candy melt.
Crush the graham crackers into fine crumbs.
Break the pretzel sticks into small pieces.
Cover just the top end of the acorn with the chocolate candy melt.
While the chocolate is still melted, sprinkle with the graham cracker crumbs and place the pretzel stick in the top for a stem.
Return to the jar or glass until the candy melt is hard.
Wrap in individual treat bags or serve in a cute vase on your fall dessert buffet!
