This Apple Chai Muffin recipe is deliciously moist and flavorful. I love the warm, aromatic flavor of Chai tea- it is made for cool, crisp mornings and muffins are a great way to satisfy a sweet tooth without going overboard. The subtle taste of Chai combined with applesauce is not only tasty but this muffin recipe is pretty healthy to boot. These muffins are a perfect breakfast or snack pick me up alongside a hot cup of coffee or Chai Tea of course. If you love the spice of Chai tea too you will definitely want to make a batch of these muffins to try.
Ingredients:
1 ¾ cups all-purpose flour
1 tsp. Baking soda
1 tsp. Baking powder
½ cup packed brown sugar
¾ cup plain Greek yogurt
½ cup Applesauce
¼ cup melted butter
1 egg
2 tsp. Vanilla extract
2 Chai Tea Bags, opened
Directions:
In a large bowl combine flour, baking soda, baking powder, and chai tea.
Stir in applesauce, brown sugar, yogurt, butter, egg, and vanilla until thoroughly mixed.
Preheat oven to 375°
Fill cupcake liners 2/3 full if you want them overflowing ( I love it overflowing- the edges get crisp) or ½ way if you want small muffins. Alternatively, instead of liners you can spray cupcake tins with nonstick cooking spray and scoop batters right into cupcake tin.
Bake for 15 minutes or until done and tops are lightly golden, test by inserting a toothpick into the center- it will come out clean when done.
