We have certain meals that we repeat week after week, one of those meals is cheese quesadillas but sometimes we get a little bored with it and want to dress it up a bit. This recipe below is my family’s favorite way to enjoy this in our weekly rotation- Barbecue Beef and Cheddar Quesadillas. Loaded with flavor and texture, and super easy to toss together even on the busiest of nights. Use your favorite shredded bbq meat and cheddar cheese for best flavor results, I have even included a dip for you to add even more tastiness.
BBQ Pork Quesadillas
Ingredients:
1 lb. shredded barbecue pork (you could also do beef or chicken as well)
2 cups shredded cheddar cheese
1 onion, sliced thin or diced
4-10″ flour tortillas
2 tsp. cooking oil
Dip-
1/2 cup ranch dressing
1/2 tsp. cumin
1/4 tsp. chipotle seasoning
1/4 tsp. paprika
Directions:
Shred pork (I crock pot mine) with two forks so that it is in small pieces.
Heat oil in a nonstick pan over medium high heat.
Add onions and saute until golden brown and tender, remove from pan set aside.
Ad a bit more oil to pan if needed then place a tortilla in pan, scatter shredded meat, top with a sprinkle of onions, and a generous layer of cheese. Heat for 2-3 minutes until cheese melts and tortilla is golden brown, flip and cook another 1-2 minutes.
Repeat with remaining tortillas, slice each into 4 equal pieces.
To make a delicious dip stir together ranch, cumin, paprika, and chipotle seasoning- it can be drizzled over the top of finished quesadillas or served on the side for dipping.
