The kids had friends over this afternoon, and things were going quite well that we decided last minute to let the friends stay for dinner. A little *too* late, I realized that I’d not checked how much food I had in the house, and started to panic. I had some burger meat for burgers, and chicken breast, so I knew I could throw those on the grill, and I had a smallish zucchini, some tomatoes and green beans from the garden, and then I remembered that I had a Pepperidge Farm® Microwavable Garlic Bread in the freezer that I could use. This garlic bread recipe literally fell into place, but was a HUGE hit, and the kids were all so happy to have garlic bread and the fresh garden veggies were devoured in no time at all. I’m feeling pretty proud of myself for using up some of the abundance of zucchini we’ve had in the house AND making an everyday thing into an oh wow thing… that everyone enjoyed! Go, me! Cheesy Zucchini and Tomato Garlic Bread
Ingredients
Fresh grilled zucchini and cherry tomatoes (You can also saute them, I just prefer to grill when possible because, well, YUM)
Pepperidge Farm® Microwavable Garlic Bread
Grated Parm Cheese
Directions
Prepare the garlic bread as directed.
Top garlic bread with zucchini, tomatoes and some grated cheese. Serve immediately.
