A few years ago, we discovered Simply Delicious Snack Bar Dough from Nestle in the refrigerated section of our local grocery stores. Instant hit. Frequent sales, coupons- and my kids LOVED them. They were quick and convenient for a fresh baked after school snack or to pack into lunches- but then they vanished from store shelves.
This recipe is our copycat version, because we cannot buy them in store anymore. Now that the kids are older, they actually are able to and are enjoying making things from scratch anyway!
Copycat Simply Delicious Snack Bars: Chocolate Chip Oatmeal Snack Bars
Ingredients
1 cup butter, room temperature + 2 tablespoons
1 cup light brown sugar, packed
½ cup granulated sugar
2 large eggs
2 teaspoons vanilla extract
½ teaspoon salt
1 teaspoon baking soda
1 teaspoon baking powder
1 1/2 cups all-purpose flour
½ cup brown flaxseed
½ cup salted sunflower seeds
2 cups old-fashioned rolled oats
2 cups chocolate chips semi-sweet chocolate chips
Note: if you’re dairy free- we like Earth’s Balance baking sticks, and recently discovered that Nestle has ALLERGEN FREE chocolate chips!! We stumbled on them at our local Walmart- so keep your eyes out.
Directions
Heat the 2 tablespoons of butter in a large saucepan and add in the 2 cups of rolled oats. Toast the oats on medium-high heat until golden brown. 4-5 minutes on each side.
In a large mixing bowl, combine the 1 cup of butter, brown sugar, granulated sugar, 2 eggs, and vanilla extract.
Slowly add in the flour, rolled oats, nuts, and chocolate chips.
Press the snack bar mixture into the bottom of a 9×13 baking pan. Pan should be greased or lined with parchment paper.
Sprinkle extra chocolate chips, nuts, and oats on top of the bars.
Bake 25-35 minutes at 350.
Remove from the oven and let cool. Cut into small bars.
*Makes approximately 2 dozen snack bars
Enjoy! These will store up to a week in an airtight container. I haven’t frozen them because they don’t last very long in our house, but we will try soon and update the post.
