Chocolate & Coconut Snowball Truffles Recipe: Secret Life of Pets Snowball Treat
One of my entire family’s favorite movies this summer was The Secret Life of Pets. Maybe it’s because we’re animal lovers, but this movie hit all the right chords. We humans can FINALLY know what our pets do all day when we’re not with them. The characters, the scenes, the story line, and the jokes were all on target. Naturally, when we heard that the film was coming to Blu-ray and DVD, we wanted to do a little something to celebrate! Snowball was for sure one of our favorite characters and we thought it would be fun to have a little snack inspired by the naughtiest bunny around. Chocolate & Coconut Snowball Truffles Recipe
Ingredients
1 package of black & white sandwich cookies (about 32 cookies)
8 oz cream cheese, softened to room temperature
10 oz package of Wilton bright white candy melts
1 package of sweetened coconut flake
small sandwich baggie
kitchen scissors
wax paper
Directions
Place the 32 black & white sandwich cookies in a food processor and pulse until completely crushed (see photo).
Slowly add in the cream cheese one small chunk at a time and pulse until the mixture forms a chocolate dough (see photo).
Use a cookie scoop to scoop the dough and then gently roll into balls.
Set each cookie dough ball on a baking sheet. Once all the dough is rolled into balls, place the cookie sheet in the fridge for 30 minutes to set.
While the balls are setting, pour the white candy melts into a microwavable safe dish and heat in 30 second increments until melted.
Let cool a few minutes and then scoop 4-5 tablespoons of chocolate into the sandwich baggie. Seal shit and snip one corner with the kitchen scissors.
Gently squeeze the melted chocolate out of the baggie to form bunny ears on the wax paper. Fill in with white chocolate and use a toothpick, if needed to spread the chocolate evenly for the ears (see photo).
Repeat and place the ears in the fridge to set.
Once the chocolate ears have set, remove from the fridge and gently peel off the wax paper.
Use the paring knife to form 2 small slits for the chocolate ears (see photo). Gently press the ears into the slits and repeat with the other bunnies.
Reheat the chocolate if needed –
-then dip each bunny into the white chocolate and then gently coat with coconut flakes.
Let the bunnies harden. Enjoy a Chocolate Coconut Snowball Truffle during family movie night while watching The Secret Life of Pets!
