Time for some Chocolate and Wintergreen Sandwich Cookies today for the 12 Days of Christmas Cookies! I can’t believe how close we are to Christmas!
These sandwich cookies are a great holiday treat! The cookie is crisp and has a delicate milk chocolate flavor that is not overpowering. The wintergreen filling pairs nicely with the milk chocolate cookie and the white chocolate topping! Chocolate and Wintergreen Sandwich Cookies Recipe coming up!
Ingredients:
- 1/2 cup shortening
- 1 cup sugar
- 1 egg, beaten
- 1/4 cup milk
- 2 1/2 ounces melted chocolate
- 2 1/2 cups cake flour
- 1/2 tsp salt
- 2 tsp baking powder
- 1/2 cup melted white chocolate
Makes approximately 4 dozen sandwich cookies.
Filling
- 1 cup confectioners’ sugar
- small amount of milk
- 1/4 tsp wintergreen flavoring
In large mixing bowl, combine shortening and sugar until well blended. Add egg, milk, and melted chocolate.
Sift remaining ingredients together in separate bowl and add to creamed mixture.
Chill dough in small portions for 1-2 hours.
Preheat oven to 350 degrees.
Working with a little dough to a time, roll out onto well floured surface to approximately 1/4″ thick. Cut into 2-3″ rounds.
Bake for 10 minutes in preheated oven.
Allow cookies to cool completely.
To make filling, combine confectioners’ sugar, milk, and flavoring until desired consistency is achieved.
Spread a generous amount of filling between two cooled cookies, drizzle with melted white chocolate and enjoy!
