I am forever looking up recipes on my phone when cooking but the screen is never quite big enough to show enough of the recipe and I can never find a good way to prop the phone while I cook. This week while making Cranberry BBQ Turkey Meatballs for a get together I used our new Nextbook 10.1″ 2-in-1 instead of my phone. This made things so much easier!

Cranberry BBQ Turkey Meatballs
Ingredients:
- 2 lbs ground turkey
- 1 cup gluten free bread crumbs – I use cornbread crumbs
- 1 tsp garlic paste
- 2 tsp Italian herb paste
- salt and pepper to taste
- 1 egg
for the sauce
- 1 can jellied cranberries
- 1 jar of chili sauce
Instructions:
Preheat the oven to 350 degrees.
Combine the turkey and seasonings in a large bowl, mix well.
Whisk the egg and add to the turkey. Combine the egg and burger well.
Add the bread crumbs to the turkey and knead until well blended.
Form burger mixture into golf ball size meatballs and place on a baking rack over a cookie sheet. This will keep your meatballs from becoming greasy.
Bake in preheated oven for 30 minutes, flipping halfway through.
While the meatballs are baking place the cranberries in a sauce pan over medium heat. Stir often until they are dissolved.
When the cranberries are dissolved add the chili sauce. Reduce heat to low and stir often.
Remove the meatballs from the oven when the internal temp has reached at least 165 degrees. Transfer the meatballs to a crock pot and cover with the cranberry BBQ sauce. Set crock pot to lowest setting and serve!

We have a daughter who moved way out of state in August to go to school. Never have had a separation like this with a child. We’d keep up on emails, Skype, t facebook with her. We really really miss her….sigh.
