We are smack dab in the middle of football season! This, of course, calls for lots of amazing food- rich, crunchy, creamy, salty, sweet, and loaded with tons of flavor. My hubby and I love to snack while we yell at the T.V cheer calmly for our favorite teams. Unfortunately I just recently found out I am lactose intolerant… no dairy! No milk, no yummy cheese, insert sad face. Luckily I have found ways to still enjoy some of my favorite dishes without the pain after. This Dairy Free Queso Dip recipe is meat free (you could totally add some meatless crumbles for some extra protein), dairy free ,and gluten free- making it an excellent option for a healthier party option. Not only can plant-based diets be good for people and better for the planet, but they taste amazing too! We took the #MeatlessMondayNight challenge this week and that’s what inspired this yummy, football-watching dip that pleases even my super carnivorous hubby! Adopting a more plant-based diet can start with making a change just one day a week – so why not start by sidelining meat during Monday Night Football games this season? Queso dip has been one of my favorite game-watching foods since…well, since forever. But with the meat and the dairy…I often paid for it the next day. Maybe the day after that. This dairy free queso dip gives me the flavor and crunch that I love without the ingredients that don’t make my body so happy.
Dairy Free Queso Dip
Ingredients:
1 cup Silk Cashew milk
1 cup raw cashews
1/2 cup diced tomato w/chilis
2 garlic cloves crushed
1/2 tsp. cumin
1/2 tsp. chili powder
1 tsp. onion flakes
1 tsp. dry mustard
1 tsp. paprika
1/2 tsp. ground black pepper
1/2 tsp. salt
Directions:
Set out cup of cashew milk and allow it to come to room temperature as you prepare the other items.
In a powerful blender (not a standard blender) puree all ingredients until completely smooth, if you like your queso thicker do not puree diced tomatoes but stir them in instead.
Transfer to a medium pot over medium heat, simmer for 5 minutes, stirring occasionally- mixture will thicken as it heats up.
Serve with chips, vegetables, pretzels, or your favorite football or party time snack!
Dip will keep in the refrigerator for up to 3 days, just reheat and serve.
