Thanksgiving is sneaking up on us REALLY fast, you guys. How is this even possible? This whole week flew by! I had a SUPER fun and quick trip with the little 2 kiddos to Seattle last week for an event with Nintendo- such an amazing time (and we had the best burgers I’ve had in my LIFE at the Tipsy Cow in Redmond, WA), and now we’re home and it’s time to get serious about menus and holiday meal prep. We will be hosting one if not 2 Thanksgiving meals this year, although likely neither will be ON the holiday itself… so it’s time for me to get busy! I have plans to use my Instant Pot for some of my cooking- check out our Instant Pot Roasted Squash Recipe- a perfect side dish done in no time at all coming to the blog tomorrow!
