Easy Ice Cream Cookie Sandwiches
Holidays are wonderful. I love them. They also mean a lot of time for adults- planning, prepping, cooking, baking, etc. If I can find shortcuts to save time, I’m all over it. These easy ice cream cookie sandwiches are SO amazing to eat and the bonus? They require exactly 0 minutes of cook time. Grab some Dancing Deer cookies (we did a triple chocolate for this recipe) and a tub of your favorite vanilla ice cream (or whatever your fave is), some holiday sprinkles and boom! Easy and festive treat. Done in minutes. The waiting for them to set will take the longest, but you can use that time to dance around the living room or catch a good part of your favorite holiday movie…or a full holiday special or two (who can resist Frosty?)!
Easy Ice Cream Cookie Sandwiches
Ingredients:
Directions:
Empty a small space out in your freezer, and thank me later for making you do it at the beginning.
Use an ice cream scoop to scoop vanilla ice cream. Flatten slightly in the carton as shown before placing onto your cookie.
Top with another cookie and gently press together to create a sandwich.
Smooth out the edges or any overflowing ice cream if necessary. I just use the back of the ice cream scoop to do this.
Dip ice cream in sprinkles and place back into the freezer for about 30 minutes.
