Feta and Spinach Stuffed Chicken Breasts
A delicious spin on a Weight Watchers recipe that is full of great taste but low in calories- inspired by Greek flavors. My kids are pretty good at eating salad and since the stuffing resembled one of mom’s yummy loaded salads they loved this chicken dish, and gobbled up the filling right away. I serve mine alongside a portion of whole wheat pasta or a sweet potato to make a very filling, delicious, and healthy dinner. This recipe is simple to cut down to one or two servings or double for a crowd- since the presentation is so pretty, it makes a great meal to serve for company. It’s a great way to add some extra iron into your diet!
Ingredients
4 Chicken breasts
¼ cup feta cheese
3 Tbsp. dried cranberries
1 1/3 cup fresh spinach
1 1/2 tsp. Olive oil
garlic salt
salt and pepper to taste
Directions
Chop or rip spinach into small pieces, crumble feta, stir together into a bowl with cranberries and olive oil, stir to coat all ingredients well.
Use a sharp knife to slice chicken breast open to form a pocket inside.
Stuff feta mixture into chicken.
Place chicken into a well seasoned cast iron skillet.
Salt and pepper to taste, sprinkle with garlic salt.
Bake at 400° for minutes 30-35 minutes until juice runs clear and chicken is no longer pink inside.

You had me at feta I love that particular cheese. Not sure about the cranberries but it would add a kick. I bet dried cherries would work too. It looks delicious.
