Garlic Parmesan Smashed Red Potatoes
Ingredients:
Red potatoes
2 tablespoons vegetable oil
Garlic powder
Salt and pepper
¼ cup Parmesan cheese
Chopped fresh parsley, optional for serving
Directions:
Poke holes in potatoes and place onto a microwave safe plate. Microwave for five minutes. Flip over and microwave for 5 more minutes or until potatoes are cooked and soft. Set aside to cool.
Preheat the oven to 425 and line a baking sheet with parchment paper. Place the potatoes on the baking sheet and flatten them with the bottom of a drinking glass until they are ½” thick.
Use a pastry brush to brush oil on both sides of the potatoes.
Generously sprinkle potatoes with garlic powder, salt and pepper.
Bake for 20 minutes. Remove from oven and sprinkle with cheese.
Return to oven for 2-3 minutes until cheese is melted. Serve topped with chopped fresh parsley.
