We’re still making beef and chicken step aside for some pork-tastic grilling this summer, and this weekend, we had our grilled chops with a Peach Mango Salsa recipe that was ah-mazingly delicious. The heat of the jalapeno with the sweet of the peach and mango was just out of this world…. and oh, so yum. Grilled Pork Chops with Peach Mango Salsa
Ingredients:
- juice of 1 lemon , lime, or combination of both
- 4 mangoes, chopped
- 2 peaches, chopped
- 1 small can crushed tomatoes (or 3 chopped fresh plum tomatoes- ours weren’t quite ripe enough when I made this batch)
- jalapeno, either fresh chopped or canned
- 1 TBSP cilantro, chopped
- 2 TBSP apple cider vinegar (tip: we always get it with “The Mother” for the health benefits)
- 1 small red onion, chopped
- 2 large pepper- 1 green, and we like orange, red or yellow for the color consistency, chopped
4 pork chops, boneless, grilled just like a steak, seasoned to taste. I believe I just used a salt-free off the rack product for these chops. (we shared a lot about how to get the perfect chops in our Mojito Lime Grilled Porterhouse Pork Chops recipe post)
Directions:
Add all ingredients to your blender. The smoother you want your salsa, the longer you want to pulse it.
Serve atop your grilled chops.
Keep extra salsa in airtight container up to 3-4 days. I do try to make this in the morning for serving at night because the flavors tend to just explode the longer they sit together!
I didn’t want this batch smooth, but my personal preference is a smoother, less chunky salsa. My husband and older daughter prefer lots of large chunks. If you really want a lot of chunk, just dice all ingredients and toss them in a bowl!
