I get into dinner “ruts” more often than I care to admit. I do. Partly because we have our favorites, but also, sometimes I just under-appreciate the awesome of pork. Do you know that you cook a Porterhouse Pork chop just like a Porterhouse Steak? True story. It’s time to give grills everywhere a makeover and spice up the traditional grilling fare! I’m always up for a makeover, aren’t you? The grill seems like the perfect place for a makeover to tell beef and chicken to step aside a few nights a week.
The folks at the National Pork Board have tons of mouthwatering chop recipes like Saucy Salsa Ribeye Bone-In Pork Chops and Cider-Brined Porterhouse Pork Chops, making it easy to turn up the flavor and crash the grill with pork. In fact, they challenged me to take part in their summer-long Grill Crashers program. The first result was these Mojito Lime Grilled Porterhouse Pork Chops, which we did a trial run of last week, and will be serving at a little Independence Day gathering over the holiday weekend to friends. I’m all for crashing, but I prefer a little test run just to be sure. These may say mojito but they are alcohol free- I think you could whisk a few tablespoons of rum, a sprig of mint and a drizzle of honey and have one heck of a sauce for your grilled porterhouse chops though! Mojito Lime Grilled Porterhouse Pork Chops
Ingredients:
1 tsp lime zest (I use 2, but I love lime flavor!)
1 tsp dried mint leaves
1/2 tsp fresh ground black pepper
1 tsp brown sugar
1 TBSP Kosher Salt
1/2 tsp garlic powder
1 tsp chili powder
1/2 tsp onion powder
1/2 tsp ground cumin
2 tsp dried oregano
juice of 1 fresh lime (reserved)
2 Porterhouse Pork Chops (Formerly known as bone-in loin chops)
Directions:
Mix all dry ingredients together in a small bowl.
Add the rub liberally to both sides of your Porterhouse chops. I really like to add a rub the night before or morning of cooking them so that they have all of those hours to just let the favors hang out and blend together into marvelous flavor).
When ready, get your grill on medium high heat. You want it at around 400 degrees, or you’ll have your pretty chops sticking to your grates. No fun. Add your chops to the grill and cook for about 8-9 minutes, flipping halfway through. For the most juicy and tender chops, grill to an internal temperature between 145 degrees for medium rare and 160 degrees for medium, followed by a 3 minute rest. Be sure to use a digital cooking thermometer to ensure an accurate final temperature. Those chops need to rest, or when you cut into them, all of the flavorful juices will come right out. Trust me. Let them sit. Those 3 minutes are better served admiring your gorgeous grill marks.
Once you are ready to serve your chops, add a bit of that reserved lime juice. Just a touch. Then, enjoy! The sky is the limit with sides for these chops. We’re pretty simple when it’s just the 5 of us… with friends, we’d add an additional side or go a little fancier. Simple blanched green beans are a family favorite and pair well with just about any grilled dish. Corn on the cob is another option!
