Homemade Blueberry Syrup
Ingredients:
1 cup frozen or fresh blueberries
1/2 cup water
1/2 cup brown sugar
1 tsp. lemon juice
1 tsp. vanilla extract
Jimmy Dean Pancakes and Sausage on a Stick (Find them in your grocer’s freezer section)
Directions:
Place blueberries, sugar, and water in a saucepan over med-high heat until boiling, allow to boil for 4 minutes.
Reduce heat and simmer for 20 minutes until thickened.
If you want a smoother syrup you can mash blueberries with a potato masher, use an immersion blender, or pop into blender/food processor once cooled.
Remove from heat and cool about 10 minutes, stir in vanilla extract and pour into glass jar with an airtight lid.
