In honor of what would have been my mom’s 68th birthday today I share with you her favorite Key Lime Pie Recipe:
Key Lime Pie |
- 6 egg yolks
- 1 15oz can sweetened condensed milk
- 1/2 c key lime juice (Persian limes can be used)
- 1 baked & cooled 9 in pie shell
- OPTIONAL
- 6 egg whites
- 1/3 c sugar
- Combine egg yolks & condensed milk, mix well.
- Slowly add lime juice- blend well
- Turn into pie shell
- Chill thoroughly
- Serve topped with whipped cream
- OR
- *Make a meringue with the 6 egg whites & 1/3 cup sugar
- Bake at 350 for 12-15 min
