Loaded Chicken Lettuce Wraps
These chicken lettuce wraps are a great light meal option- use up some leftover chicken, and don't forget the bacon!
Ingredients
- 2 cups Cooked Chicken, Shredded (Rotisserie Chicken works Great)
- ½ cup Shredded Cheddar Cheese
- ½ cup Celery, diced
- ½ cup Green Onion, diced
- ¼ cup Bacon, cooked and diced
- ½ cup Sour Cream
- ½ cup Mayonnaise
- 1 tsp. Season Salt
- Romaine Lettuce Leaves
Instructions
1. Combine all the ingredients, except the lettuce, and stir together until well combined.
2. When ready to serve, put a small scoop of chicken salad onto a lettuce leaf and serve.
3. Garnish with extra onion and bacon pieces if you would like.

Loaded Chicken Lettuce Wraps
It’s a cold, rainy day here, but signs of spring are still starting to show. The whole yard is just mud, but the robins are back, the trees are starting to show some buds, and daylight is lasting longer and longer. If the temps would just warm up, that’d be great! I’m ready for spring and summer foods again. Heavier comfort foods are great in winter but when spring comes, I want a change. Bring on the wraps and salads and picnic foods, please.
Using lettuce for a wrap makes for a lighter meal. It’s less carbs, no gluten, and just leaves you room for other yummy foods when you don’t have bread! I do love my bread, and carbs, but I also know it’s important to not have them with every single meal, or at least it’s important to kind of cut down on the quantity of carbs.
A simple cottage cheese salad would be a nice, light side to go with these chicken wraps, and it’s a great way to use up some leftover chicken!

Ingredients
- 2 cups Cooked Chicken, Shredded (Slow Cooker Rotisserie Style Chicken works great- make a big batch and use it for these lettuce wraps, Keto Chicken Stuffed Jalapenos, Chicken Pesto Pizza or Buffalo Chicken Sandwiches too! )
- ½ cup Shredded Cheddar Cheese
- ½ cup Celery, diced
- ½ cup Green Onion, diced
- ¼ cup Bacon, cooked and diced
- ½ cup Sour Cream
- ½ cup Mayonnaise
- 1 tsp. Season Salt (Pick up a lower sodium season salt variety if you’d prefer-

Directions
Combine all the ingredients, except the lettuce, and stir together until well combined in large mixing bowl.
When ready to serve, put a small scoop of chicken salad onto a lettuce leaf and serve.
Garnish with extra onion and bacon pieces if you would like.
