And without further ado, I give you our low carb oven roasted chicken recipe, sure to please any number of folks around your table.
Low Carb Oven Roasted Chicken
Ingredients
- 4 chicken thighs, washed, dried, skin on
- 1 sweet pepper, cut into slices
- 1 onion, small, cut into slices
- 8 – 10 carrots, whole, peeled, end cut off
- 3 c green beans, frozen
- 4 – 5 garlic cloves, skins removed, coarsely chopped
- ½ c olive oil
- 3 – 4 tbsp. lemon juice as desired
- salt and coarsely ground pepper
- 1 ½ tsp Italian seasoning
Directions
1. Salt and pepper the chicken. Place it in a large bowl. Add the sweet peppers and onions.
2. Add the garlic pieces, onion slices, olive oil, lemon juice, and Italian seasoning.
3. With clean hands (the best way to do this), begin folding all the ingredients around in the bowl, being sure all the seasoning elements are coating the chicken well.
4. Cover with cling film and let marinate refrigerated for at least one hour, or even better, the entire day.
5. Preheat the oven to 375.
6. Line a sheet pan with parchment paper
7. Place the chicken pieces onto the sheet pan, taking up approximately 2/3’s of the pan. Gather all the onions and peppers, and lay them on the pan beside the chicken.
8. Place the carrots alongside the peppers. Drizzle olive oil and salt and pepper over the carrots.
9. Bake in the oven for 25 minutes.
10. At the 25 minute mark, remove the pan from the oven, shift the chicken over slightly and pour the green beans over the top of the food on the sheet pan.
11. Continue to roast back in the oven for another 25 – 30 minutes or until the beans and carrots are cooked and the chicken is also cooked through.
12. Enjoy!
** this may seem like a lot of garlic in the recipe, but because it’s roasted with the chicken juices and other marinade ingredients, the garlic tones it’s flavor and becomes very mild.
