If you are looking to “sneak” more veggies into your child’s diet one great way to do it is to let them be a part of the preparation. Choosing, chopping, stirring-all will serve to get your child more interested in eating. I personally love cauliflower but I don’t think you have to like it to enjoy this pizza crust, while the flavor is vaguely there it is not as overwhelming as say -steamed. While this cauliflower crust does not taste like, nor have the texture of a traditional flour crust it is delicious in its own uniqueness -My 3 year old who is frustratingly picky declared this “The best pizza ever!” This recipe gives them some practice in washing vegetables, chopping, stirring, and spreading toppings as well.
Mini Cauliflower Crust Pizzas
Ingredients:
1 head cauliflower
1 egg
½ cup grated Parmesan cheese
½ tsp. Basil
½ tsp. oregano
½ tsp. garlic powder
Toppings: sauce, cheese, fresh veggies, pepperoni…
Directions:
Preheat oven to 250 f
Line a baking sheet with parchment paper or a silpat mat.
Cut off stem and greenery from cauliflower, rough chop if desired.
Place cauliflower in food processor and grind until very fine.
Move ground cauliflower to glass bowl and cover with plastic wrap.
Microwave for 3 minutes.
Allow to cool completely.
Transfer to center of a clean kitchen towel, twist, squeeze out all the liquid you can.
Place back in bowl and add Parmesan, egg, basil, oregano, and garlic powder-stir well.
Divide into 4 small piles on parchment lined mat, press firmly to ¼” or thinner.
Bake for 25-30 minutes until edges begin to brown.
Remove from oven, top with your favorite add ons-cheese, sauce, etc..
Place back in oven to melt cheese.
