Mini Key Lime Pie Cheesecake Recipe {Surprise Ingredient}
I love indulging in dessert, especially cheesecake, but I needed to make it a little more…waist friendly. I still wanted amazing flavor and texture, I really didn’t want it to taste like I changed up my favorite recipe at all. I had heard of putting cottage cheese into recipes in place of some cheese and thought that I had to try it. I grabbed a tub of Friendship Dairies 1% Cottage Cheese and started experimenting and not only did I come close, I actually improved on my original recipe, giving it an even creamier and lighter texture! The fresh lime juice adds a pop of flavor in a subtle way.

I can’t enter the contest myself, but I love taking delicious desserts to parties all year round, but particularly in summer, and I like incorporating cottage cheese into those recipes like these Mini Key Lime Pie Cheesecakes. Cottage cheese is The Original Superfood, so adding it in brings a creaminess and texture to recipes but also a boost of protein to keep those summer picnics and the games we all play during them going even longer.
Mini Key Lime Pie Cheesecake
Ingredients:
3/4 cup Friendship Dairies™ Cottage Cheese,small curd
1-8oz. brick cream cheese, softened
1/2 cup granulated sugar .
1/4 cup key lime juice
2 eggs
1 Tbsp. all-purpose flour
1/2 tsp. vanilla extract
12 mini graham cracker pie crusts
Directions:
Preheat oven to 350°
Place Friendship Cottage Cheese in the bowl of your stand mixer with the paddle attachment.
Mix on high for 4-5 minutes until it’s nearly smooth. I love the protein and calcium that the Friendship Dairies™ cottage cheese adds to this dessert. Add softened cream cheese, sugar, and vanilla, beat until well combined. Add eggs, just one at a time, on medium speed until just mixed.
Slowly add lime juice until mixed in.
Place individual crusts in a baking sheet with 1/2″ of water in the bottom.
Carefully pour filling so that it is level with the top of crust. Bake in the oven for 20-25 minutes, until the edges just begin to lightly brown and center is set.
Allow to cool completely, top with 1/2 a key lime wedge and serve! *If you are unable to find Key Limes you can substitute with bottled lime juice or fresh Persian limes.
