I found a fun, quick and simple little treat that will satisfy your sweet tooth and may even give you a little pep in your step! A little bit of coffee adds a great mocha flavor to these no bake cookies.
Mocha Cornflake Cookies
Ingredients –
4 cups cornflakes, any brand
1/3 cup light corn syrup
4 tbs. butter
½ cup sugar
½ cup peanut butter
1/3 cup of unsweetened cocoa powder
2-3 tsp. instant coffee
Directions –
#1. Cover 2 baking sheets with wax paper or foil.
#2. In a medium saucepan melt the peanut butter, cocoa, butter sugar and corn syrup on low heat until melted. Add in the 2-3 tsp. of instant coffee. Stir well until melted. Remove from heat and stir in the 4 cups of cornflakes. Stir well to completely coat the cornflakes.
*Makes approximately 1 dozen cookies. Store in an airtight container in the fridge. Total prep time = 45 minutes.
