Keeping everyone happy for dinner in this house isn’t always easy. Keeping myself sane planning dinners in this house isn’t always easy. That’s why I love finding or creating (or a mix) meals that let me cook once, eat twice. With pasta dishes, it’s super simple to toss some extra pasta in a pot to cook, and set some aside for another night…it’s also a great way to stretch your grocery budget, even with gluten free pastas. This sausage & pasta skillet meal recipe gives you a great way to use up leftovers AND have a full dinner on the table in just a short time!
One Pot Sausage & Pasta Skillet Meal
Ingredients
16 oz cooked pasta (I used leftover pasta from the night before)
16 smoked sausage
1 14 oz can of diced tomatoes
1 bunch of green onions, chopped
1/2-1 tbs minced garlic
2 tbs olive oil
1 C. shredded mozzarella cheese (If you are doing a gluten free pasta, be sure to get gluten free cheese if you purchase shredded)
salt & pepper to taste
Directions
In a medium skillet (I like to use my cast iron skillet for this), heat the minced garlic and olive oil.
While the pan is heating, slice the smoked sausage and toss into the pan.
Add the diced tomatoes and green onions.
Add in the cooked pasta and heat through.
Lastly, sprinkle the 1 cup of mozzarella cheese on top and place a cover on the pan and allow the cheese to melt.
Serve with garlic bread or a salad.
