I’ve made this apple cinnamon french toast casserole overnight and I’ve also made and cooked the same day and it’s delicious either way! Plus it makes your house smell amazing. I also like it without syrup. Using a nice Challah loaf in place of French bread is a great option- but definitely do that option as an overnight. It just takes this breakfast or brunch casserole to the next level of yum. French toast casseroles have become a family favorite through coronavirus quarantine- we’ve been doing all kinds of cooking and baking stuff and my youngest loves to do breakfast foods!! This is a fun twist on an oldie but goodie that we love to make for Christmas morning breakfast!
Overnight Apple Cinnamon French Toast Casserole
Ingredients:
Casserole
1 loaf, french bread, cut into 1” cubes
3 cups peeled and chopped apples
8 eggs
2 cups milk
½ cup half and half
½ cup white sugar
1 teaspoon vanilla
1-½ teaspoons ground cinnamon
Topping
¾ cup all purpose flour
¾ cup brown sugar
1 teaspoon ground cinnamon
½ cup butter, softened
Directions:
Grease a 9×13 pan with nonstick cooking spray.
Place half of the bread into the baking pan and sprinkle apples on top.
Top with remaining bread.
In a mixing bowl, add eggs, milk, half and half, sugar, vanilla and cinnamon and beat well with a whisk. Slowly pour over bread evenly spreading in the pan.
Set aside.
In a separate, and small mixing bowl, combine flour, brown sugar and cinnamon and mix well.
Use a pastry blender to cut in butter until small crumbs form.
Sprinkle on top of pan. Cover and refrigerate overnight.
The next day, uncover and bake for 40 minutes at 350 degrees or until a knife stuck in the center comes out clean.
Serve topped with syrup or powdered sugar as desired.
