Pan Roasted Cauliflower with Seared Sweet Onion
Ingredients:
- 1 head of Cauliflower, sliced
- 1 large Sweet Onion, sliced
- 3 – 4 Tbsp Olive Oil, divided
- 2 tbsp unsalted butter (or dairy-free butter)
- Sea salt, to taste
- Cracked black pepper, to taste
Directions:
1. Quickly brown sliced cauliflower on both sides in a large pan with olive oil and butter, season with salt and pepper to taste.
2. In a separate pan caramelize onion using unsalted butter, salt and pepper to taste.
3. Transfer cauliflower to a baking dish and top with onions. Bake in the oven for 30 – 40 minutes until cauliflower is tender.
4. Remove from oven.
5. Serve.
