Some flavors of childhood lose their appeal when you grow up. Cheap boxed macaroni and cheese? Lost my taste for it. Chocolate milk? No thanks. But a classic Peanut Butter and Jelly just never lost it’s appeal, plus it’s great for those days you are just too lazy tired to make a real meal. It naturally translates deliciously into a number of recipes… like our Peanut Butter and Jelly Granola, milkshakes, muffins, etc.. But today, I bring you a recipe to turn it into a favorite breakfast treat, the perfect way to send the kids off to school this year! PB&J Pancakes, no syrup needed. I used my favorite semi homemade pancake recipe and a few extra ingredients to make these PB&J Pancakes!
Peanut Butter and Jelly Pancakes
Ingredients:
2 cups pancake mix
1 cup milk or water
1 egg
1 Tbsp. brown sugar
1/2 cup smooth peanut butter
Directions:
Melt peanut butter for 30-45 seconds in a microwave safe dish.
Stir together melted peanut butter and all remaining ingredients.
Heat butter in a nonstick pan over medium-low heat
Scoop batter into pan into approximately 4″ circles, cook until bubbles start to form and pop, flip cook on other side until golden.
To top: Heat an additional 1/2 cup peanut butter and 1/2 cup of jelly for about 30-40 seconds and pour over pancakes as you would syrup.
Add a cup of cold milk and enjoy!
