The National Pork Board (NPB) is celebrating “Porksgiving” – a time for giving back (with pork) to those who give back– from November 2, 2015 through the end of the year. Creating a delicious meal for friends or family members is a great way to give back and say thanks, make a tasty recipe to share with someone who deserves it- a member of the military, law enforcement professionals, volunteers, etc.
Pork makes an excellent main ingredient in everything from appetizers to main dishes. They make the perfect app for fall get-togethers and even on your Thanksgiving table. Pork makes a fantastic base to your meal! It really made these Pork & Apple Stuffing Bites something really special. Dishes like this one are great for giving to others, and are easy to prep in large quantities- so when you make a batch for your family, bake a few extra for some neighbors.
We are taking the month of November to give back to those who give so much to our community. We decided to take this batch of Pork & Apple Stuffing Bites to a neighbor, who served several years in the Marine Corps to provide them and their family with dinner and more importantly, our thanks for serving our country. I am proud to call these people my friends and neighbors.
Our friend served two tours in Iraq, while his wife created a home for him and began raising their boys- both are heroes in my book. Thank you to all who serve! How can you give back to those in your community? Think of someone who has served you personally, your community or your country. This could be a service man or woman, the mail carrier, your local fire department, etc.
Pork & Apple Stuffing Bites
Ingredients:
- 1 lb. ground pork
- 1 apple
- 1 stalk celery
- 2 cups dry stuffing mix
- 1 egg
- 1 tsp. garlic salt
- 1 tsp. parsley
- 1 tsp. paprika
- 1/2 tsp. black pepper
- 1/4 tsp. red pepper flakes
Directions:
Preheat oven to 350°.
Line large baking sheet with aluminum foil for easy cleanup.
Peel and finely dice apple.
Finely dice celery stalk.
Combine all ingredients in a large bowl and mix until well combined.
Form into ping pong sized balls, pressing firmly.
Place on prepared baking pan.
Bake for minutes until golden brown.
Drizzle with your favorite gravy.
