Pumpkin Spice Latte Rice Krispies® Treats
Ingredients
6 C. Kellogg’s® Rice Krispies® cereal + extra if needed
10 oz package of mini marshmallows
1/4 C. canned pumpkin
3 tbs. butter
1 tsp. pumpkin pie spice
1/2 tsp vanilla
1/8 C. coffee
Directions
Spray a 9×13 baking dish with non-stick cooking spray. Set aside.
Add the butter, canned pumpkin, pumpkin pie spice and mini marshmallows to a large sauce pan or dutch oven and melt on low/medium heat (see photo below), stirring occasionally.
Once the marshmallows have started to melt, add in the 1/2 cup of coffee
Next, add in the 6 cups of Kellogg’s® Rice Krispies®® cereal, gently folding them into the marshmallow mixture. *If the mixture isn’t thick enough, slowly add in more Kellogg’s® Rice Krispies® 1/2 cup at a time.
Pour the Kellogg’s® Rice Krispies® Treats into the 9×13 baking dish and gently press down with the back of the spoon.
Let set and then cut into squares and enjoy. Do not refrigerate! They’ll get all hard and the gooey goodness will be ruined.
If you aren’t into traditional treat squares- have a little fun with your treats. Making these for a party? Grab a cute little pumpkin cutter and add a whole new level of fun! A portion sized cookie cutter is all it take to create a festive treat, even without adding in any extra flavors or mix-ins! That’s the beauty of Kellogg’s® Rice Krispies® Treats. You have so many possibilities to change things up.
