Raspberry Filled Christmas Stars Foundation Cookies are today’s 12 Days of Christmas Cookies recipe! So pretty and so sweet with a hint of tart with the berries.
Raspberry Filled Christmas Stars
Ingredients:
- 3/4 cup shortening
- 2 eggs, well beaten
- 1 cup sugar
- 3 1/2 cups cake flour
- 3 tsp baking powder
- 1/2 tsp salt
- 1/2 cup milk
- 1/2 tsp vanilla
- Confectioners sugar
- Raspberry cake/cookie filling
In large mixing bowl, cream together shortening & sugar and add eggs.
Sift dry ingredients together and add, alternating with milk and vanilla. Mix well after each addition.
Roll dough on floured surface to 1/4″ thick. Cut into medium stars, cutting a small star from the center of each.
Place the solid medium stars on cookie sheet and add a teaspoon of raspberry filling to the center of each and top each with the cut out stars.
Carefully press the two layers together with a fork.
Bake at 400 degrees for 6 minutes.
Allow cookies to cook on baking rack for 10-15 minutes and sprinkle with sifted confectioners sugar.

I love the store bought version of these so this recipe is fantastic!

These look delectable; however, I would use baking truvia instead of cane sugar, for topping I’d opt for crushed nuts.
