My husband’s been home 3 full weeks now with the government shutdown. I’m not going to get all political in here, don’t worry. These aren’t even political cookies. Promise. But with him home, he’s been able to do a lot more of the errands/running around with the kids stuff, and I’ve found that a few times, I’ve had some spare time. His absolute FAVORITE treat is chocolate chip cookies, and with his birthday coming up on Friday of this week, I decided I’d make this sea salt chocolate chip cookie recipe.
- 1 cup softened unsalted butter
- 1/4 c sugar
- 3/4 c packed brown sugar
- 1 egg
- 1 tsp vanilla extract
- 1 1/2 cups flour
- 3/4 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp Sea Salt
- 1 1/2 c chocolate chips or chunks
- Oven to 350
- Cream butter and sugars for 3 minutes on medium speed in mixer
- Add egg and vanilla and beat for 2 additional minutes on medium
- Add in salt, baking soda, and baking powder on low speed
- Add flour on low speed.
- Add chocolate chips until spread throughout dough
- Bake 350 for 11-13 minutes

I’m trying to figure out how to make this recipe sugar free, I think I could do it by using Hershey’s sugar free chocolate bars and either agave syrup or Brown sugar splenda.
