Ward off the winter chill by fueling up with a big bowl of comfort food- this Slow Cooker Baked Potato Soup is perfect for just that. Rich, filling, and hearty it is a complete meal loaded into one bowl. Chunks of potato, rich bacon, and creamy cheese mix to create the flavor of loaded baked potatoes that are over the top good.
Slow Cooker Baked Potato Soup
Ingredients:
3 lbs. red potatoes
1/2 lb. bacon
1 medium onion
4 ½ cups chicken broth
1 ½ cup milk
2 cups shredded cheddar cheese
¾ cup sour cream
½ cup butter
2 T
3 cloves garlic,crushed
salt and pepper to taste
Directions:
Dice onions into small pieces.
Place butter, garlic, and onions in the bottom of slow cooker, turned on high, while you prep the rest. This will give them a nice caramelization
You can use precooked bacon or any method of preparing your bacon that you prefer. If you have not tried baking it in the oven yet-you should. Less mess, evenly cooked, and you can work on other stuff without worrying about it. To cook your bacon in the oven- Spread bacon out onto a baking sheet then place in oven, bake for 18-20 minutes or until bacon is to your desired doneness.
Whisk flour into onion mixture in slow cooker.
Cut potatoes into large bite sized pieces.
Chop bacon. Reserve some to garnish soup.
Add potatoes, broth, bacon, 1 1/2 cups cheddar cheese, salt and pepper to crockpot.
Reduce heat to low and cook for 7-8 hours, or 4 hours on high.
Mix in milk and sour cream at the end of the cook time
If desired use a hand/stick blender (immersion blender) to chop up your potatoes and create a smoother soup. You could also use a potato masher.
Garnish soup with remaining cheese and chopped bacon.

I love potato soup and make it likely twice a month or so in the winter. Your version looks really dood. It’s a tad different than mine, I dont usually use bacon because I make bacon and it gets all eaten up ! I use ham in mine , or even add chicken and it turns out great. In the winter this soup cant be beat thats for sure.
